The Secret Nobu Singapore Menu Nobody Tells You About

There's a particular kind of magic that happens when a restaurant decides to stop showing you the menu and start showing you what it can actually do. That's what happened at Nobu Singapore, on a night that was meant to celebrate my brother-in-law Seb's birthday and ended up becoming one of the more memorable meals of my year.
The plan going in was simple enough — book Nobu, order well, make it a proper celebration. What we didn't plan for was a quiet word with a chef I've come to know, and the small, deliberate nod that followed. Dishes started arriving that weren't on the menu at all. Nothing shouted about it. No fanfare, no announcement. Just plates set down with the kind of confidence that only comes from a kitchen operating well outside its comfort zone, showing off in the most understated way possible.
I won't give away every course here — that's what the video's for — but I'll say this: the omakase experience, when a kitchen decides to actually open up, is a different category of dining entirely. It's not about the price tag or the name on the door. It's about trust — the diner trusting the chef, and the chef, in turn, deciding you're worth the extra step.
Seb's birthday ended up being the perfect excuse for an evening that, frankly, needed no excuse at all. Jules was there to see the whole thing unfold, and if you watch closely in the video, you'll catch the exact moment the surprise course landed and nobody at the table quite knew what to say.
Class, as always, beats cash. And on this particular night, Nobu Singapore proved it in eight unforgettable courses.
